RAW VEGAN MEATBALLS WITH ALMOND “CHEESE” (Raw vegan gluten free recipe)

NOODLES WITH SCAMPI FISH AND PISTACHIOS PESTO

Ingredients:

  • 5 Cauliflower florets
  • 5 Champignon mushrooms
  • 5 Dried tomatoes
  • 1 handful of mixed seeds
  • Salt q.s. (Optional)

Ingredients for almond cheese:

  • Raw peeled almond (200 grams)
  • 3 Spoons of extra virgin olive oil
  • 1 Teaspoon of nigella damascena seeds
  • 1 Pinch of salt

Ingredients to decorate:

  • Dried flowers q.s.
  • Pink peppercorns q.s.

Process
Prepare the meatballs by blending all the ingredients until you get a malleable dough. Place into the dough and place in the dryer at 42°C for 8/10 hours. Prepare the cheese by shuffling all the ingredients (Except the seeds) until you get a smooth and homogeneous mixture. Add the nigella damascena seeds, pour the mixture into a flask and let it rest in the fridge for a few hours. Apply, overturning the cheese and sprinkle it with dried flowers and pink pepper grains.
