They are ideal as an ingredient for the preparation of typical products such as amaretti cookies or almond paste, which gives them a pleasant aroma. If consumed fresh, moderate use is recommended due to the toxicity caused by the presence of amygdalin (Able of release hydrocyanic acid and present in the armellina of all stone fruits, that is peaches, plums, cherries and apricots).
